Orazio Carciotto turns plain old milk into the most amazing mozzarella cheese you have ever had. We have been there several times, and Orazio has been kind enough to give us cheesemaking demos every time. When the snow white delight is up to his standards, he twists off small balls (bocconcini) of the warm, salty, just-made mozzarella for us to taste. How he gets milk to do that is truly a mystery. If you ever find yourself at the corner of 187th and Arthur Avenue, do not miss this place!
